Vegetarians Eggplant and Pasta Recipe
2 servings
1 eggplant about 1 LB
1/2 Lb pasta of your choice
1/4 cup olive oil
3 garlic cloves finely chopped
1 can 12 oz pasta sauce
1/3 cup fresh basil chopped
1/4 teaspoon crushed red pepper ( optional)
Preheat oven to 350
1. peal and slice eggplant into thin slices about 1/2 in thick and bake until tender.
2. Cook pasta
3. In a large skillet saute garlic in olive oil until tender about 2 minutes
4 add pasta sauce and red pepper then cook about 10 minutes
5 add eggplant, basil and pasta and toss to coat.
Serve with your favorite side dish.
