Hot and Sour Citrus Black Beans

Ingredients:
2 cup's cooked black beans
One Pinch Tarragon
One Pinch Parsley
One Pinch Basil
1/4 teaspoon oregano
1/4 teaspoon sage
1 bay leave
1 teaspoon chili powder
1 tablespoon red wine vinegar
juice from one lime
juice from one orange
2 tablespoons olive oil
1 yellow onion
2 jalapeno peppers
2 sweet banana peppers
1 red or orange bell pepper ( you may substitute green or yellow bell pepper)
3 cloves of garlic
Directions:
1. Place fully cooked black beans in a one gallon pot.
2. Cut onion, bell pepper and banana peppers into one inch peaces. Liquefy Jalapeno peppers and garlic.
3. In non-stick pan saute bay leave, onions, bell peppers and banana peppers in olive oil along with liquefied garlic and jalapeno peppers.
4. Dig out bay leave and discard. Add sauteed mixture and all other ingredients to beans and cook on low for thirty minutes stirring often. If not thick cook another thirty minutes or until thick.
Makes 4 servings
Serve over rice, corn bread or tortillas.
Top with a cheese of your choice or sour cream and avocado.
Best beans ever.
